Sabio & Dudley Square

SABIO opened in April 2012 and is a trendy, casual fine dining restaurant inside the historic Dudley Square school house located on the corner of Maxwell & Mill Streets in downtown Lexington, Kentucky. The Dudley Square building was originally built in 1881, serving as the third city school in Lexington.

SABIO creates all our dishes fresh from scratch in the SABIO Kitchen – even our house made ice creams. The culinary team is lead by Executive Chef and Owner Javier Lanza, a James Beard Award Winning Chef whose resume boasts restaurants in New York City, Nashville and California as well as right here in Kentucky. We here at SABIO pride ourself in offering the freshest and best ingredients to create exceptional dishes for our guests. We have herbs like lavender, sage, thyme, basil and mint growing in the SABIO Herb Garden and update our menus seasonally.

The name SABIO was chosen because of it’s rough translation to ‘being wise and educated’, a title befitting the educational history of the building. The entire interior of the restaurant was remodeled using contemporary upscale decor, including several large paintings by Australian artist & former chef Gordon Richards.

The real reason you’ll love SABIO isn’t because of the location or decor, it’s the food. French American cuisine with Spanish & Caribbean influences, our menu offers a little bit of everything. Most importantly, we make all of our food fresh; farm-to-table as they say. We’re a Kentucky Proud establishment buying from local farms & even growing all of our herbs on property, in the SABIO garden.

Javier Lanza – Executive Chef, Founder & Owner

Chef Javier was born to cook, helping his mom in the restaurant since the age of 2. Since then he’s cooked for big name establishments across Kentucky, Tennessee, California & New York – including Park Avenue Cafe & Remi both in New York City.

Javier’s Executive Chef experience also includes Amelia’s Field Country Inn, a national top 100 bed & breakfast, the infamous The Trace in Nashville, Tuttuzzo in San Jose,  The Signature Club & Jean Farris Winery in Lexington & most recently he was the Owner & Executive Chef of Migdalia’s in Paris, Kentucky. Additionally, Chef Javier is James Beard Award Wining Chef passionate about creating the ultimate dining experience for his guests.

Chef Javier dropped everything when he was asked to open SABIO in the historical Dudley Square building. The downtown location & historical building provided a perfect venue for Chef Javier to showcase his unique cuisine for the Lexington community.
